As the summer comes to a close, we have been able to enjoy a few long awaited beautiful days in the sun. Just because summer is ending doesn't mean things are winding down. Oh no! We are keeping them going with another business educational seminar and after hours networking that will be some of our best yet! We couldn't think of a better way to relax after a hard day a work than with a relaxing and fun After Hours Networking event at Serenza Salon & Spa. Come enjoy a number of featured services their expert team will be providing to our guests at this event. Hand treatment, massages, make-up touch ups and even something for the gentleman. This event will fill up fast so be sure to RSVP early with "After Hours" in the subject line. Last month's educational seminar was a great success having everyone who attended walk away with expert knowledge of how to incorporate Facebook into their business marketing plans. This month our friends at All Seattle Web Design will show us the differences in what makes a good and bad website and how to make yours one of the best! Enjoy The Tastes Of Summer
GRILLED OR ROASTED VEGGIES OVER CREAMY POLENTA
What better way to enjoy the bounty of a summer harvest than to leave the list at home, head to the (Burien) Farmers Market and find the freshest local veggies roast or grill them and serve over creamy polenta? You can alter the amounts and ingredients to your liking and the season and enjoy this one year round. Quantities depend on who's coming for dinner, but feel free to make extra as leftover's are just as good the next day.
- Zucchini (green and yellow work great, eggplant if you prefer) cut into rounds
- Walla Walla Sweet Onion large chopped
- Red Pepper chopped
- Green Pepper chopped
- Asparagus halved
- Mushroom (Crimini or Portabella) halved
- 8 oz crushed tomatoes
- EVOO (Extra Virgin Olive Oil)
- Fresh Thyme (lemon variety in the summer)
- Fresh Basil
- Salt & Pepper
- Polenta (prepared as directed on package, we used Bob's Red Mill)
- Cream Cheese
Lay all veggies out on a sheet pan, drizzle with salt, pepper and EVOO. Roast at 425F (400F convection) for 20 minutes or grilled on the BBQ until those nice grill marks appear.
While veggies are cooking prepare polenta. Ours was made with 3 cups vegetable stock brought to a boil, add 1 cup polenta stirring to avoid sticking to the pan and reduce heat to a simmer. After 2 minutes or when the liquid has been absorbed add 1-2 tablespoon cream cheese, a pinch of salt and pepper to taste. (this method makes enough for 4 portions)
Place your creamy polenta mixture on a plate and top with the cooked veggies, sprinkle with torn fresh basil and drizzle with crushed tomatoes. A garnish of goat cheese or sprinkle of freshly grated mozzarella can be added.
This is a recipe anyone can enjoy and easily alter for food allergies or dietary restrictions. Enjoy!
